Job Description:

  • Ensure accurate tracking of all inventory movements, including food and beverage costs, recipe costing, inter-kitchen transfers and employee consumption, with detailed variance analysis and reporting.
  • Oversee daily and monthly reporting of food and beverage costs, including cost of sales, wastage, pilferage and efficiency, while ensuring accurate data entry and compliance with procedures.
  • Conduct regular audits of F&B operations, including purchasing, receiving and preparation processes. Provide actionable recommendations for improvements in control and cost management.
  • Prepare and distribute daily and monthly F&B cost reports, perform surprise spot checks at F&B outlets and collaborate with management to ensure accurate pricing, discounts and inventory control.
